Brewed at 1.3.0 with correctly mixed third wave water. Presumably it’s the water, but this had a very clean taste if still a little uninspiring. I guess thats just the bean. It was well balanced though there was a slight dryness in the long term after taste. The body was a little thin. As before, the mouthfeel was excellent with a nice tasting oily feeling coating the whoe interior of teh mouth - is that the robusta coming through. The previous burnt robusta style after tastes wasn’t there.
What to do next with this? I don’t know. Attemopst to change it seem to get the same reult. The only thing I can think of is trying a traditional 9 bar flat profile with a much finer grind so that it does at least develop some back pressure, but looking at the curve, its going to be very fine and will prpbably take a few shots to find the right level.
This is a 4 way blend (see photo) that is made to be like a classic Italian coffee, whatever that is.
I’ve been grinding at about 1.3.0 which runs very fast, but still tastes well balanced with the flow limiting profile.
The non drying bitter after taste reminds me of an Indonesian robusta that I tried at the show, but my experince with this is very limited so who knows if it was that 10% Robusta coming through.
