Well that was my 5th attempt, initially grinding at 1.3.0 slowly down to 1.000 and it’s still a very unpleasant soily, vinegary sourness. The bean produced almost no fines when crushed so I feel it might be a lighter roast than the colour / bag would suggest. In the milk the sourness was masked, but it complteley lacked body and felt like I was drinking hot milk with a slight hint of coffee. Not great :-(
Its’ been hard to get it to maintain pressure until this last shot at 1.0.0 and even then the sourness prevailed on a shot that had a 6s fill and the ran for another 45s. It didn’t help that I hadn’t noticed that the Gaggimate had lost connection with the scales so had to stop it manually slighty longer than intended 30g at around 32-33 grams. Thats why there’s no weight data.
Moving forward I need to think. This is so sour I’m wondering if I should use that Ethiopia Guji Mormora profile that had a 15s soak and a declining pressure and somehow pulled something nice out of the extreme lemon flavor. Even that was only ground at 1.1.8!
