| Bean: Note | Yuliana is a fourth-generation coffee farmer, raised on the mountains where shenow cultivates her own farm. She left her hometown to study BusinessAdministration in Tegucigalpa, where she met her husband Jorge, a student ofAgricultural Engineering from a neighboring coffee community. Their shared love forcoffee united them, and together they formed an exceptional team.Today, they manage three small farms. Both are 33 years old and parents of twoyoung boys. In 2011, they bought Finca La Colocha, named after Jorge’s nicknamefor Yuliana, “the curly-haired girl.” The farm had been abandoned, but they renovatedit with a focus on specialty coffee, planting Catuaí and Bourbon varieties at highaltitude.Challenges remain, as the farm is on a steep mountainside, requiring erosionbarriers to protect the soil. Harvesting is difficult, but Yuliana enjoys walking the farmwith her family, seeing each tree as part of their dream.Update 2024 – Like many producers, Yuliana faced labor shortages and climatechange, with irregular rainfall limiting fertilization. This required a stronger focus onpruning and farm maintenance to sustain yields.Update 2025 – This year, Yuliana and Jorge continue strengthening direct buyerrelationships, giving them confidence in sustainability. They are experimenting withshade management and soil conservation, and plan to test honey processing ona small scale to diversify beyond washed coffees.For Yuliana, coffee is both a family legacy and a passion, now shared with herchildren. Her vision is for Finca La Colocha to become a symbol of resilience,innovation, and family strength, producing specialty coffees that carry the story ofHonduras in every cup. |

| Brew: Note | Grinder needs recalibration after burr cleaning: 2 setting was too fine and the shot choked. Bianca auto pre-infusion 6s On / 10s Off. Attempted to lower pressure to ~7 bar, but flow remained restricted with a late puck release opening up ≈30s. A rebel shot that just wanted to bloom. Actually very nice. Sweet overall, with a slight initial bitterness at the back of the tongue that softened as the shot cooled. As temperature dropped, the cup opened up into a well-balanced profile with integrated sweetness and acidity. Interestingly, it turned into a blooming espresso on its own, sweet and well rounded. |
