Mmmm. Reduced the pre-infusion to 5s whic strangelyt cauased a much longer extraction (13 > 25s). The result was more acidic, but not in a plesant way. I think next is to put the pre-infuse to 10s and see what happens. Not sure if it was developing acid, but still with bitterness or it needs more acid to get into the fruity zone. Lets see.
The fill phase was slightly light at 22g and teh bottom of teh basket wasn't wet. Will increase to 23g.
