Well back to a grind setting of 1.3.8 and that pleaant, but strong, bitterness came back. At 1.4.0 it was slightly to acid for my liking so the surprising result is that maybe a tiny 0.0.1 change on teh kinu might make the difference. Is there still a hint of cellulose? Not sure, but I plan to reduce the pre-infusion by 1s to see.

The flavor of this was interesting. Bitter at the start, but that faded as teh cup cooled and there was a sharper, less bitter, bt also slightly less pleasantr flavour. I thonk I just like that bitterness to balance the milk.

Only one shot left, otherwise I might experiment with this in a 250ml cup. Worth trying in future if I buyt this again from Sarnies. However, next is to experiment with a few other Sarnies beans.

The fazenda from CherryDog was really nice, so thought I would try Sarnies. This is Natural process and smelled a little yeasty when fresh.

It’s quite brittle and shatters into many pieces which suggests a coarser grind due to the fines. It might also need a profile that doesn’t run too fast and cause the fines to migrate. Lets see. I’ll run it in the MHW3-Bomber 18g 58mm basket with paper.

My prefered grind size was around 1.3.9 though this was definitely on the bitter side. Grinding finer bought out an acidity that I didn’t really afvor Maybe its the yeastiness.
