Changes water TDS to about 75 and flushed the machine. Ground sligh;lty finer at 1.3.2. It was acidic today, but still OK from the shot glass. However it doesn't have that bitter sweet chocolatey flavour that I have come to expect from this bean.
Need to try finer with th new water. Maybe 1.2.8 and see if the water change stops it getting too edgey.
Also, there is a possible centering issue with the grinder, but I have no way to tell if it's alwways been like that and whether it self centeres when griding, but there did appear that the gap on one side coul dbe up to 70 microns different than teh other which would give a massive particle distribution and perhaps explain the flavours I suddenly seem to be struggling with.
I love this bean and got a rich intensity from the outset, stull trying to dial out a slight hint of cellulose, but not enough to detract from the enjoyment. Will definitely buy more!
