Mechanically that worked better and no wild channelling or wierd pressure spikes in this shot, though there was early blonding at about 30g and a distinct cellulose taste when in the milk. Unusually it wasn’t so noticeable in the shot glass.
Just to tidy up and slightly shorten the fill and soak phases I have pushed the pressures up a little and removbed the 1s ramp ups. The natural flow of things means it doesn’t ramp uip instantly anyway. I will also shorten the shot to 30g to match when I perceived it had given all it had to give. Just hope this doesn’t introduce sourness. I will also slow it down very slightly by shifting the grind size to 1.3.3.
The fazenda from CherryDog was really nice, so thought I would try Sarnies. This is Natural proces and smells a little yeasty, so I wonder how that will come out once it’s been intensified in an espresso shot.
It’s quite brittle and shatters into many pieces which suggests a coarser grind due to the fines. It might also need a profile that doesn’t run too fast and cause the fines to migrate. Lets see. I’ll run it in the MHW3-Bomber 18g 58mm basket with paper.
I have noticed that I prefer shots to be bitter if they fail, so maybe start on the finer side (say 1.3.0) andd work coarser from there.
