So now we have water with a tds of 75 the acidity seems a bit more fruity, so might stick with this for a while. I ground a bit finer at 1.3.0 and extended the shot to 36 grams which brought out the bitter sweetness quite a bit more, but there was a little of the apple acidity remaining. I guess this is actually quite a nice flavour and pretty much what it says on the bag. The shot on it's own was also nice. However, I'm temptyed to push the bitterness slightly further for a milk drink and try to take teh apple pip edge off to get something slightly less edgey. This time lets do that by increasing the output to 39 grams rather than adjusting the grind size.
It was also very slightly too intense in the milk, but I don't think enough to jump to a 250ml cup.
I love this bean and got a rich intensity from the outset, stull trying to dial out a slight hint of cellulose, but not enough to detract from the enjoyment. Will definitely buy more!
