Can’t seem to shake the unplesant acidity from this shot despite the fairly extreme profile. The bean worries me slightly as I’ve never had to do this before for a medium roast. Its’s slightly pale and cardboardy and there’s a lot of chaff retained in the central area between the two beans. Teh beans break under the thumb quit enormally, but one of the 5 beans I broke had a texture more like a roast peanut. Bean densityy at ).392 gms/ml is more reminiscent of medium light roasts that I’ve had in the past.
So, bean or me? I currently have no idea and not sure hwat to try next!!
It’s been tough so far as it seems to be a much lighter roast than the bag suggests. Under the thumb it takes a bit of pressure, but produces almost zero fines and I’ve been grinding at the finest size ever. The taste so far is an unpleasant earthy vinegar, but it’s still not dialled in. Density at 0.39g/ml also suggests this is more of a medium light and needs pushing much harder. Interesting. Lets see.
Will report back after running an extreme hot fine grind long ratio long pre-infusion shot to see if I can extract some bitterness. I’ll then work back from there.
Update - Well, ran a light roast profile and the metallic acid flavour persisted. No idea what I’m doing wrong. I might have to abandon this one which is a shame as I’ve generally had such a great experience with Sarnies beans.
