Notes:
Ground finer at 1.2.8 and it became what i thought was more sour, the opposit of what expected. However, thhis wasn't a normal sourness. What I now think is happening is that the change to third wave water extracts a slighlty different edgier, sharper bitterness when pushed and I am misinterpreting this as sourness. So next shot I will go back to 1.3.2 and see if it improves.
Note that this also suggests I got it wrong with the bean from kittiowat and simply need to grind quiote a bit coarser.

I love this bean and got a rich intensity from the outset, stull trying to dial out a slight hint of cellulose, but not enough to detract from the enjoyment. Will definitely buy more!
