Some of the lemon sourness returned. The apricots were there, but muted. The flowers had gone. Either it lost something in the fridge or the increased time since roast means going a little finer. Maybe aim for 1.2.0 with the next shot. It may be getting a little stale as the aroma had also lost something. Time to use it or freeze it.

Coffee bag notes:

A lighter roast possibly best for Americano or pour over. It needs a long pre-infusion, high temperature and a long ratio. Finding the sweet spot releases tastes of apricots and flowers. Luckily this still comes through in the milk and makes an unusual but tastey latte. Missing the sweetpot means an unpleasant and very strong lemon sourness.
