Notes:
Ground a little coarser and pre-infusion down to 3s. This created an intense apple pip bitterness that was nonetheless clean and didn't have that drying after taste suggesting some of this may just be the bean. It lacked body so I'm tempted to switch approach and grind quite a bit finer (say 1.2.4) while restricting output to 27g to control bitterness.
