Notes:
I'm struggling and not sure if this is water or grinder or something else. I seem trapped in a zone where there's too much bitterness, but with a sharp acidic edge. Is this really both coming trhough? Theories:
- The grinder centering is off and I'm getting too much mix of particle sizes
- The third wave water id making the taste brighter and my taste callibration is thrown
KLets maybe focus omn teh second and try the third wave water at hals strength. Will need to flush the machine to make that work!
Coffee bag notes:
I love this bean and got a rich intensity from the outset, stull trying to dial out a slight hint of cellulose, but not enough to detract from the enjoyment. Will definitely buy more!
