Finally got the profile to do what it was supposed to by spotting I had stupidly set phase 1 to end when the weight reached zero.
This was the last shoit for this bag and it came out one sided, so there may have been some chanelling meaning theres not a lot to learn. However, tehre was definitely some acidity, the body was not there and the mouth feel was more watery. Overall, nit as nice as that last “accidental” brew profile, sugestion that a slow initial phase might be better.
I did learn that the 10s to fill and pressurise is about right. It hit the target 8 bar at 9.25s.
So, profile adjustmnents. I could just grind finer, but I’m tempted to so that and add a short pre-infuse phase after the long fill required for the high head space on the step down basket. I also suspect this shot might benefit from a slightly shorter ratio, but first things first.
I like this bean when its freash, so might try another bag despite finding it hard to trust CherryDogs roast dates.
This is bean that I have had before with a pleasant and nuanced bitterness brewed with a flat 9 bar profile before I had the Gaggimate upgrade.
Experiments so far have revealed that with reduced bitterness it can reveal a pleasant savoury acidity not unlike tomato, but is very prone to blonding early and releasing a cardboardy falvor. I canontine to work on elliminating that without having to shortent the ratio excessively.
The bean can be broken under the thumb, but not as easily in many. Just 3 main chunks plus smaller pieces from the skin.
Appearance is medium-dark with some light oild.
This bag was frozen for 6 weeks, although the first shot did have significant CO2. I did refreeze 100grams as I don’t think I would use it all without a break.
