Firest shot with this bag and bean. It ran quite quick in the brew phase an only 30g out, but was quite an unplesant bitterness. For e medium / medium dark bean I would have expected more acidity, especially based on the Sarnies description. I can only assume that the issue is the long infusion phase which is probably too lonbg for a bean like this. I think I will just reduce it to 5s and see if that shifts things in the rreigth direction before doing anything else. Also need to reduce the initial fill phase very slightly. Lets drop from 24ml to 22ml and see what happens.
