Brew: Note[prep] good solid prep. Just like yesterday. Only note is that predicting exactly what the final tamped weight is going to be with the puck screen works out less often than is used to. [pull] interesting. 2 extra clicks finer made a big difference in the first drop and overall shot time. I could have sustained a higher pressure. The shot did maintain a nice even if somewhat slow pull and definitely had more extraction even if it was the same 1:2 ratio as 2 days ago. [milk] something slightly off with my pitcher or wand tilt resulted in some late aeration. Not bad especially when grooming with 2 pitcher but it did effect the mix and pour. [art] slightly white mix/integration and I didn’t tilt properly and more dumped the heart that had good flow. [taste] definitely stronger taste with a tail kick/bitterness. Less sweet even though milk had perfect temperature and sweet foam. Very interesting to understand the science between this shot with a finer grind and the one 2 days ago. Also while the cremma was a little more tenacious in this shot the overall body was still thin.
