The cherries, harvested at high maturity (24β28 Brix), are sorted by flotation and then fermented in several stages: oxidation in cherry form, anaerobic fermentation at low temperature, then submerged fermentation with recirculation of the cherry juice. A final thermal shock stabilizes and fixes the aromatic profile. Drying, carried out under dehumidification with controlled rest phases, ensures optimal balance. This advanced process produces a precise, silky, and intensely aromatic coffee with notes of apricot, strawberry, and sweet cherry. A well-balanced, gourmet cup, combining roundness and brilliance. Nestor Lasso is a young visionary producer based in Pitalito, in the Huila region of Colombia, who runs the El Diviso farm. Alongside his brother Adrian and their partner Jhoan Vergara (Finca Las Flores), he embodies a new generation of specialty coffee growers, combining family heritage with technical innovation. Together, they work with rare varieties such as Sidra, Geisha, Pink Bourbon, and Java, using highly controlled experimental processes: anaerobic fermentation, thermal washing, prolonged maceration, and slow drying. The result is coffees of exceptional complexity, with floral, fruity, and sometimes tropical profiles, often described as explosive and elegant.
