| Bean: Note | This is an exemplary Pink Bourbon variety from our friends at Equation Coffee in Colombia. With delicate floral notes, and a bright, honied acidity, this coffee shines as a filter brew. We lean on the vast network of producers who are doing great work in Colombia, and this microlot from Yulieth Mora illustrates what we love about coffees from this region. The Story This coffee comes from our friends at Equation coffee. Each season we comb through the samples they send our way, and we slowly build some regional lots as well as some farm separations that make up our blends. This coffee was flagged for us as a single farm lot, when we cupped this in our lab we separated it out as a single origin release from our partnership. This microlot comes from Cauca, grow by Yulieth Mora. While the cultivation of Pink Bourbon has spread across the world, we love this variety grown in Huila and Inza for its sugary sweetness and light, bright confectionary notes. Read more on the variety below. Pink Bourbon After appearing mysteriously in Huila, Colombia, "Pink Bourbon" has spread from Huila to many other producing countries. Now it is recognized not as a Bourbon variety, but as a larger part of the Ethiopia Landrace family. We regularly love this variety for its complex acidity and delicate florals. Since the 15th century, cultivation of the coffea genus has disseminated from its birthplace in Ethiopia to equatorial countries across the globe. In the process, genetic adaptations and mutations have allowed for the introduction of an increasingly high number (the true count is unknown) of unique variations underneath the Arabica species alone, each with their own distinguishing properties and identifiers. For Onyx, part of our commitment to sourcing some of the greatest coffees in the world includes having an adept understanding of the many varieties currently being cultivated, and a devotion to seeking out the highest performers among them. We intentionally list the variety of every single coffee we publish, but the implications behind this information are much less commonly known.
