Processing is carried out by Olina Caicai and her team at a local station, where each step is performed with precision. The selected cherries are then fermented for 7 days in anaerobic tanks at 20Β°C, with the addition of a patented yeast strain that enriches the aromatic profile. At the end of this controlled fermentation process, the Whole Beans washed with mountain water and then slowly dried on raised beds for 15 to 30 days. The cup reveals a floral profile marked by rose, accompanied by hints of lychee, a touch of honey, and a delicate hint of oolong tea. The texture is silky, carried by a slight acidity, for a coffee that fully expresses the richness of the Yunnan terroir and the meticulous expertise of the Olina Caicai team. Β About Yun Yun Nannan β One Light Project Founded in 2021 by Olina Caicai (Yatong Cai), Project One Light is an initiative dedicated to promoting Yunnan coffee. Based in the heart of the province, the team brings together local Q-graders, processing experts, and committed traders. Their mission is based on ethical practices, empowering producers, and careful management of the environment to ensure consistent quality and a sustainable supply chain. POL aims not only to offer exceptional coffees, but also to support small producers who have historically been invisible on the international market. The project highlights remote villages, little-known micro-terroirs, and little-known expertise, opening up new opportunities for rural communities in Yunnan. The goal is to build a more accurate, diverse, and human representation of coffee from this unique region. |
