However, last year we had some coffee from them roasted and shared privately to few coffee nerds and feedbacks are "most Clean YunNan". I have Talk to ChenWen, Owner of the Farm, about the clean cup, and he shared a lot of detail processing informations. Through the words, I feel a lot of passion, love and knowledge from him to coffee processing. Before the trip to China, I have contacted him in advance to secure two interesting lots. This lot is one of his cutting edge experimental process lot. After sampling, I feel confident to make it a No Crack to showcase the Unique Acidity and Sweetness. Process: Whole Cherry Cold water fermented for 10days, De-pulped then Dark Room Dry for 12 days. About Farm: In 2025, the Yunnan Gesha processed by Shouzhuo, won 6th and 9th place respectively in the Gems Of YunNan. Dedicated to crafting excellence at the heart of Chinaβs coffee regions. Since founding in 2022 in Lujiang, Yunnan, the farm have been pushing the boundaries of the Chinese green coffee industry with cutting-edge processing and innovative cultivation. The Farm have successfully developed a new washed processing method specifically designed to eliminate the 'unpleasant finish' (often called the 'devil's tail') of Yunnan Catimor. they also introduced the Shouzhuo Honey Process, which is eco-friendly, efficient, and sensory-enhancing. |
