NoteThis Colombia from Sey Coffee is a real delight in every way. Octavio Rueda, a farmer from the Palestina area in the Huila region, is one of the producers who knows how to get the best out of the Pink Bourbon variety. His coffee is a showcase of purity, elegance, and depth. In the cup, you will find notes of pomegranate, hibiscus, and lime, which blend beautifully into a refreshing and juicy profile with a delicate floral undertone. It is a coffee that feels light but leaves a long, complex impression. The El Mirador farm , located at an altitude of around 1,800 meters above sea level, is a place where the cultivation of Pink Bourbon has become a true craft. Octavio bases his work on meticulousness and attention to detail, picking the cherries by hand when they are fully ripe, sorting them by flotation, and leaving them to rest overnight whole. This is followed by 80 hours of underwater fermentation, which gives the coffee its distinctive acidity and purity of flavor. After fermentation, it is washed and dried on raised beds until the moisture content reaches the ideal 10.5%. The result is a coffee that perfectly captures the potential of the Pink Bourbon variety: elegant, floral, and yet distinctly fruity. Pink Bourbon is a variety that has gained enormous respect among specialty coffee lovers in recent years. Although it was long believed to have been created by crossing red and yellow Bourbon, genetic analyses show that it is actually an Ethiopian landrace variety that has adapted to local conditions in Colombia. As a result, it combines the delicacy of Ethiopian coffees with the complex sweetness of classic Bourbon.
