| Note | Sey Coffee roastery brings another gem from its Ethiopian project, this time with a processing method that will appeal even to the most curious coffee lovers. Elora Fermented Honey comes from the Arbegona area in the Sidama region, home to some of Ethiopia's most distinctive and pure flavor profiles. The cup combines notes of melon, papaya, and lime, which together create a juicy, slightly tropical, yet elegant experience. This lot, labeled Elora #151, is the result of a collaboration between the Sey roastery and the new Elora processing facility, which focuses on separating individual micro-lots according to their character. The coffee comes from small farms at an altitude of 2,300–2,450 meters above sea level, where coffee trees grow in the shade of native trees and ripen slowly in the cool mountain climate. The Arbegona region is renowned for the extraordinary diversity of its varieties, which is why this coffee has such a distinctive and layered expression. Fermented honey processing is still rather rare in Ethiopia. Ripe cherries are first picked by hand and, after hulling, part of the pulp, known as mucilage, is left on the bean. The coffee is then fermented for 24 hours, which gives it depth and sweetness, and then slowly dried in the shade and in the sun until it reaches optimal moisture content. The result is a coffee with beautiful clarity, a delicate texture, and natural sweetness that perfectly captures Sey's philosophy of precision, nature, and exceptional flavor. Harvest: January 2025 |
