Cleaned Niche after yesterday’s shot.
Initial temp set to 90C. Good PI, almost-full-length bloom. Faster flow than expected — perhaps because of the long bloom? Grapefruit, prune, dark cherry. Less prune, more effervescence. (Is that more a mouthfeel than a flavor?) Good with foam. Lingering dry, chewy, tannic / black tea aftertaste.
Adjusting the profile for a shorter bloom, from 20 sec to 5 sec, to “steep” the shot for a shorter amount of time, in hopes of decreasing the amount of tannins.
